Ingredients

  • 10 cl brut champagne
  • 2 cl lemon juice
  • 6 cl Cointreau
  • 0.5 egg white(s)
  • 4 cl homemade mint syrup (recipe below)
  • 500 ml water
  • 150 g powdered sugar
  • Approximately 100 fresh mint leaves
  • For decoration: 2 orange supremes, 2 orange (or lemon) zests

Preparation steps

  1. Rinse and dry the mint leaves.
  2. In a saucepan, pour in the sugar and water. Add the mint leaves.
  3. Bring to a boil for 10 minutes, until the sugar is dissolved and the texture becomes syrupy.
  4. Let it cool and blend. Let it infuse for 2 hours, then strain using a fine sieve.
  5. Pour the syrup into a sterilized container and store for up to 1 month.
  6. Preparation of the cocktail:
  7. In a shaker with ice, pour in the mint syrup, lemon juice, Cointreau, and egg white. DO NOT ADD THE CHAMPAGNE.
  8. Shake vigorously for 1 minute.
  9. Then, add the champagne to the shaker and mix quickly to homogenize.
  10. Pour the mixture into cocktail glasses, filtering out the ice.
  11. Decorate each glass with an orange supreme, an orange zest, and some fresh mint. Serve immediately.
