By combining the delicacy of lilac flowers with the subtle tang of lemon, this recipe offers you the opportunity to preserve a piece of the season in a bottle. Ingredients

  • 1.1 liters of water
  • 110 grams of fresh lilac flowers, without their stems
  • 1 organic lemon
  • 1.1 kilograms of white sugar

Preparation steps

  1. Begin by bringing 1.1 liters of water to a boil in a large saucepan.
  2. Once the water is boiling, remove the saucepan from the heat and add 110 grams of carefully destemmed lilac flowers.
  3. Slice your organic lemon into thin rounds and add them to the saucepan.
  4. If you're looking for a slightly spicy touch, you can also add a cinnamon stick at this stage.
  5. Cover the saucepan with a lid and let the mixture steep for about 20 minutes.
  6. Then strain the preparation using a fine sieve or a fine-mesh strainer, being careful to gently press the flowers and lemon rounds to extract the flavors but without overdoing it to avoid any bitterness.
  7. Weigh the amount of liquid obtained and add an equal weight of white sugar to the saucepan (approximately 1.1 kilograms).
  8. Return the saucepan to the heat and bring the mixture to a boil. Then reduce the heat and simmer for 15 minutes to completely dissolve the sugar and concentrate the flavors.
  9. Meanwhile, sterilize your glass bottles by immersing them in boiling water for about 10 minutes.
  10. Using a funnel, pour the hot syrup into the sterilized bottles and seal them tightly.
  11. Let the bottles cool to room temperature before storing them in a dark place. Once opened, the syrup should be kept in the refrigerator.
