Tepache is a traditional Mexican fermented drink easy to prepare. It is usually made with pineapple peel for a zero waste version, but it can also be made with chai. Tepache is usually fermented for several days and is served fresh. The drink is generally sweet and can be flavored with various spices such as cinnamon, ginger, pink berries or cloves.
It is important not to forget your bottle of tepache in the fridge because fermentation can be explosive. If you let your tepache ferment too long, there is a risk that the bottle will explode.

2 liter


  • 1 organic whole pineapple
  • 2 liter mineral water
  • 200gr of brown sugar
  • 1 cinnamon stick
  • 2 cloves

Preparation steps

  1. Remove the pineapple skin and cut into pieces
  2. Put pineapple skin, sugar, cinnamon and cloves in a large jar
  3. Cover with 2 liters of water
  4. Seal the jar tightly
  5. Shake a little to mix well and leave in a room at room temperature
  6. For 4 to 5 days, shake the jar 3 times a day
  7. The fermentation will be done gradually and when the drink is ready to be filtered, you will have a good layer of foam. top
  8. When you see this foam, filter into a bottle that closes and leave at room temperature for 12 hours to get the tepache sparkling.
