Refreshing Rhubarb and Citrus Cocktail

- 300g of brown sugar
- Zest and juice of one orange
- Zest and juice of one lemon
- 450g of rhubarb, cut into pieces
- 1 slice of fresh ginger, peeled
- Prepare a large saucepan, pour in the sugar, and add 300ml of water.
- Let it simmer gently.
- Incorporate the zest and juice of the orange and lemon, the cut rhubarb, and the ginger into the saucepan.
- Continue to cook over medium heat until the rhubarb is tender and begins to break down.
- Strain the mixture using a sieve lined with cheesecloth, and collect the juice in a heat-resistant pitcher.
- Transfer the juice into sterilized bottles.
- You can store this concentrate in the refrigerator for up to a month.
- To serve, mix about 25ml of the concentrate with 100ml of sparkling water, or adjust according to your taste.
